Considered a fruit, Rhubarb is really a vegetable belonging to the Sorrel family. Victoria's deep red, 10-12" stalks have a bit of a wine flavour. Harvest stalks by pulling rather than cutting, leaving at least half to allow buildup of food reserves. Exquisite in pies and cobblers, equally delicious stewed and served with ice cream, sorbets, or citrus custards for a special treat.
